Washed (Wet/Parchment) Process
What it is: The coffee fruit cherry’s skin and fruit are removed soon after picking, then the beans (in parchment) are fermented to break down mucilage, washed clean, and dried.
Naturals (Dry/Cherry) Process
What it is: Whole coffee fruit cherries are dried intact (skin + fruit on), then hulled after drying to remove the dried fruit and parchment.
